HAZELNUT CREME ROYALE RECIPE

Ingredients:

– 15ml DaVinci Gourmet Intense Hazelnut

– 45ml VSOP cognac

– 30ml cold brew coffee

– fresh rosemary

– coffee beans

Preparation: CREME LIQUEUR

– 5ml DaVinci Gourmet Intense Lychee

– 5ml baijiu

– 60ml milk

– 30ml whipping cream

-15ml lemon juice

– 2 egg whites

1. Combine all the ingredients into a whipped cream canister.

2. Load nitrogen cartridge and shake till the creme liqueur is fully incorporated.

Creation:

1. Grind 50g of coffee beans and filter slowly with 250g cold filtered water to extract 200g of cold brew coffee.

2. In a cocktail shaker, combine VSOP cognac, 30m of cold brew coffee and DaVinci Gourmet Intense Hazelnut.

3. Pull the concoction with an attached strainer several times to create the cold brew liqueur coffee.

4. Fill the cocktail glass with cold brew liqueur coffee.

5. Top with handmade creme liqueur from the whipped cream canister.

6. Garnish with fresh rosemary and coffee beans.

7. Finish concoction by lightly torching the surface of the creme liqueur.
