In your opinion, what are the biggest flavour trends of 2019 in the Philippines?​

Milk teas and healthy drinks using local ingredients are very popular in the Philippines. People are more health conscious, they want the option of satisfying their thirst with healthy beverage options.

Where do you find your inspiration when creating new drink applications?

I place a lot of emphasis on being healthy. So I make sure that most of my creations are made with nutritious ingredients. That said, I also focus on the types of concepts that appeal to the customers.

Which is your favorite DaVinci Gourmet product and why?

I love all of our products but the DaVinci Gourmet Frappease Powder would probably be my favourite because of its versatility. It can be used in different drink applications and can be mixed with any flavours specially in blended drinks. This product gives a different experience from texture to taste.

What is the most innovative (craziest) flavour combination you experimented and how did it turn out?

The craziest flavour combination that I experimented with was exotic but well balanced drinks, fruity flavours with spices and Apple Cider Vinegar. My goal was to create healthy drinks in any drink application and it turns out good.

Can you share a memorable (fun) or (inspiring) experience you have had as a Flavour Genius?

Organising competitions and trade shows are some of the most memorable experiences I have had as a Flavour Genius. We bring together different people with different beliefs to one big event. I see how I can inspire others and get inspired in return. That’s the most important thing for me, that I get in return what I give to others.

What are some key challenges Baristas or Mixologists are facing in the industry?

The trends are fast evolving, from flavours to techniques. Drink makers keep trying new things and are more adventurous when creating their recipes.

How would you see them overcoming these challenges?

Create a masterclass that is not only engaging and fun but also educational, technical and detailed. That way they can help the community grow.

What advice would you give to young aspiring baristas or mixologists who are eager to learn and succeed in the trade?

  • Be passionate about the art of drink making. Educate yourself on the basics and keep up with the trends.
  • If you are working with someone whose skills you admire, observe their techniques and ask questions.
  • Whichever format helps you learn best, maintaining a proactive and receptive attitude it is key and don’t be afraid to experiment and make mistakes along the way!

What is your favorite beverage to make and why?

My favorite type of beverage to make are Indulgent blended drinks. I love playing with different flavours and I’m fond of giving that extra pizzazz to my drink. This kinds of beverage are for all ages and I am so happy to see kids with a smile while drinking my recipes.

What do you enjoy the most about being a Flavour Genius?

The best part of being a Flavour Genius is when you know that you put a smile on someone’s face because of a drink you created. Apart from that, I enjoy being the face of the DaVinci Gourmet brand.

This is a non-alcoholic drink with a bold combination of fruit and spiced flavours to bring exotic but well balanced beverage. People nowadays are getting more health conscious and this is a perfect drink to freshen up their day and be healthy at the same time.


Green Apple Campagna Syrup 5ml

Spiced Turbinado Syrup 15ml

Caramel Syrup 5ml


Apple Cider 90ml

Apple Cider Vinegar 5ml

Lemon Juice 5ml

Rosemary Sprig 1pc

Cinnamon Stick 1pc

Ice 150g

Mesquite wood chips 0.1g


Green Apple fan with caramelized sugar


Put Cinnamon, Star Anise and Rosemary and lemon into the glass

Pour the rest of the ingredients into a cocktail shaker with ice

Roll (Throwing) 7-10 times, strain into a show glass and smoke

Garnish with Green Apple fan with caramelized sugar on top

Tasting Notes: Refreshing and floral, touch of vinegar, grapefruit gives a hint of bitter, combined
with aromatic and juicy lychee fruit.


This is completely a plant-based smoothie made with dragon fruit, Mango and Raspberry. With this drink, you can taste a tropical fruits flavour (tastes like a bit light kiwi and pear) with raspberry and a citrus finish. I suggest to sip the drink and bite a little of the popsicle. This way it will add more sweetness on the drink and will give another layer of flavour.

Mango Fruit Mix 30ml

Raspberry Rhapsody Syrup 30ml


Dragon Fruit 60g

Chamomile Tea 60ml

Lemon Juice 10ml

Lemon Ice 200g

Mango Popsicle 1 stick


Blend all ingredients into a blender cup until smooth

Serve in a cocktail glass or margarita glass

Garnish with desiccated coconut on the rim, lemon slice and dragon fruit

Top with mango popsicle Ice-cream
